Need to kick things up a little ? I’m sure these coffee cocktails will do the trick.

Coffee cocktails is much more than the classic Irish coffee or espresso martini, which I think must be the most well known coffee cocktails, but they also are for a reason, its really deilicious cocktails.

I want to show that there is much more to sipping coffee in drinks than making the classics, and therefore I have made four drinks with coffee which shows you can go in many different directions using coffee to kick up your sips with a little caffeine.

If you like me, love a good coffee and also cocktails. Then I’m sure you’ll love these cocktails with the use of coffee.

Coffee cocktails - Mocca marg

Mocca marg

40 ml Tequila reposado
25 ml Fresh organic lime juice
15 ml Cointreau
15 ml Coffee liqueur – floated
10 ml Agave syrup
Dash margarita bitters

Method: Shake with ice & fine strain into a chilled glass with ice. Float coffee liqueur
Garnish: Lime peel

Blue cocktails are fun vibrant and eye catching. These funky and often fruity cocktails are a perfect way to get your summer blues started.

I love experimenting with the visuals, to make eye catching cocktails, and blue cocktails are some of my favorites. They always seem to draw peoples attention, make them curious and has a “wow” effect.

If you want to make mesmerizing blue cocktails, a good way to start is to aquire a bottle of curacao blue, this will turn your cocktail into a beautiful blue serve, and works perfectly well as a substitute for cointreau or orange liqueur in your tropical and fruity blue drinks, to make them sparkle like the deep blue salty sea water.

In this post I want to display two vibrant, fun and delicious blue cocktails I have made, which I served “slushed ice style”. Both are perfect cocktails to enjoy on the pation in the summer, or just when you want a ice cold, delicious and fruity sip. Try them out – you won’t regret it.

30 ml Tequila blanco
30 ml Agave gin
30 ml Fresh organic lime juice
15 ml Falernum
15 ml Curacao blue
Dash orange bitters

Method: Blend all ingredients with ice to slush ice consistency & pour into a chilled glass
Garnish: Dehydrated orange, lime peel & glass straw

Kombucha cocktails

Kombucha works particular well with sour cocktails like a margarita. Use kombucha to serve a highball, long drinks or even a collins styled serve, which I made in the kombucha cocktail recipes you’ll find below.

Kombucha or kombucha tea is a fermented, tart and refreshing, sweetened black or green tea. The tea is usually fermented for a period of 10 to 14 days at room temperature, and is known and commonly consumed for the health benefits, and typically contains under half the content of sugar, known to be used in regular soft drinks like soda water.

Many kombucha’s are often added with flavourings in form of fruits, spices or other flavourings to enchance the taste experience. Added flavourings to enhance the taste, is also used in the two kombucha’s I have used to make the cocktails which I have displayed in this post.

Just like beer, brewing your own kombucha at home, is increasing it’s popularity all over the world. The kombucha’s I’ve used for the kombucha cocktails, also started as a home brewing project, which later on grew into a company, that now produces commercially for consumers to buy.

Drinks on fire – yes these flaming cocktails will light you up.

There is something intriguing about fire, wether its a campfire or in a chimney. Fire can wake a feeling in all of us. But today I want to talk about drinks on fire or cocktails where you get to play a little with fire.

Lighting a match and expressing citrus oils through the fire over your cocktails or torching fruits, herbs or ganishes will instantly wake your senses, and give a new aspect to your sipping experience. The smell or taste will give a new dimension to your drink that you would have been left without, and I’m sure you will have the attention of the people around you, when you serve these drinks.

Below you’ll find five cocktails I’ve made using fire, and I hope that these will inspire you to make your own “drinks on fire”.

Layered cocktails

To me there is something pleasing about getting layered cocktails served. I think the visual appearance makes it fun and vibrant.

I often use Butterfly pea flower infused gin, when I make layered cocktails. You can infuse any type of clear liquid with these flowers to obtain the colour, or you can buy one of the well-known gin brands which makes them.

If you are looking in the purple / blue scale of colours to serve in layers, you can also look after blue curacao which comes in both liqueur and syrup or “Iovem liqour” (used in one of the recipes below).

If you decide to build your own cocktail in layers, always think about densities, because it will decide what liquid goes on top or bottom.

Butterfly pea flower also reacts to acidity, making it change colour, keep that in mind if you add something that is sour / contains acidity like lemon or lime. To see the effect, I recommend a “magical” Gin & tonic with butterfly infused gin, the gin will change colour once you add the tonic.

HOW TO INFUSE GIN WITH BUTTERFLY PEA FLOWER:

1: Pour 0.7L gin in a container, add 10 butterfly pea flowers.

2: Save the empty gin bottle for later.

3: Stir every hour to the colour is how you prefer, takes 3-4 hours.

4: Strain the infused gin into the empty bottle with a funnel.

5: Now you have infused your own gin, ready to serve, enjoy!

  • 20 ml Lillet blanc
  • 15 ml elderflower liqueur
  • 1 bar spoon simple syrup

Method: Muddle cucumber & mint, shake with ice. Double strain into a chilled glass with ice, float with gin


Garnish: Cucumber, mint & dehydrated lemon

  • 40 ml gin BPF infused (floated)
  • 10 ml lillet blanc
  • 10 ml homemade elderflower cordial
  • Indian tonic

Method: Build in a chilled glass. Add lillet and elderflower cordial – stir. Add ice, top with tonic, float with gin

Garnish: Dehydrated lemon & butterfly pea flowers

  • 30 ml aged apple brandy
  • 30 ml scotch
  • 25 ml Iovem liqour (floated)
  • 25 ml fresh organic lemon juice
  • 20 ml homemade demerara syrup
  • Dash abbotts bitters

Method: Shake with crushed ice & pour into a chilled glass, top with more crushed ice and float with liqour

Garnish: Dehydrated apple, slice of ginger & glass straw

G&V GT

  • 40 ml BPF infused gin (floated)
  • 10 ml white vermouth
  • 10 ml grapefruit liqueur
  • Dash grapefruit bitters
  • Peach tonic

Method – Build in a chilled glass. Add vermouth, grapefruit liqueur and bitters – stir. Add ice, top with tonic, float with gin

Garnish – Dehydrated grapefruit & rosemary

New Year’s Eve is approaching, do you have your new year cocktails ready ?.

The book “2020” is turning it’s last pages, and what a year it’s been! I think we can all agree on that.

The biggest topic of them all in 2020, have been the COVID-19 pandemic, and for many American citizens the US presidential election as well. Even though I live in Europe, I followed the election from distance and found it very interesting.

People and companies all over the world, have been affected by the COVID-19 pandemic and it has been tough for many industries. Working full time in the hospitality industry, I’ve seen how the pandemic have impacted this industry. I’m happy to see the how companies, bars and restaurants have invented new creative ways to make sales and help each other to get through these difficult times.

Hopefully we are entering the final stages of the COVID-19 era, so things can get back to “normal” and we can see “the light at the end of the tunnel” (go get drunk at bars).

New year, new beginning, new goals

Many of us have New Year resolutions. Whether yours is dropping weight, start exercising, or something else, a new year is a great opportunity to start chasing your dreams. I hope that you will achieve all of your goals for 2021!

Christmas and cocktails. We all have something we associate with Christmas. For me, it’s the smell of Christmas dinner and cookies spreading from the kitchen throughout the house and it’s decorating the Christmas tree with handpicked ornaments.

Christmas syrup

How to make your own Christmas syrup:

Ingredients:

Christmas syrup
80 ml fresh squeezed orange juice
5 TBSP demerara sugar
40 ml amaretto
12 cloves
Peel of ½ an orange
Cinnamon stick
½ liqourice stick
Tiny bit of fresh grated nutmeg
Pinch salt

Method:

1: Bring orange juice and demerara sugar to the boil.

2: Take off heat and add all other ingredients. Leave to rest for 2-3 hours.

3: Strain through coffee filter or cheese cloth and its ready to use.

Lately I have been working on some fun dessert cocktails with meringue.  I accidentally stumbled upon the idea of using Italian meringue to top on cocktails. Once I tried it, I was sold!

Some of my dessert cocktails are inspired by tasty well-known cakes such as Lemon Pie and “Grandpa’s beard”. “Grandpas beard” cake is a classic Danish cake with three layers: spongy cake, raspberry jam and meringue on top.

I have used less sugar/liquor in my dessert cocktails, as the meringue adds the perfect balance of sweetness.

Italian Meringue is particularly perfect to top on cocktails, as the meringue stays on top of the liquids. The eggs in Italian meringue are definitely NOT cooked, so if you are squeamish about using uncooked eggs in desserts, I suggest you use whipped cream instead.


Italian meringue recipe

I recommend using a KitchenAid/mixer for this recipe, as it will provide the best result.

100 g sugar
40 ml water
40 g pasteurized egg whites
Pinch vanilla sugar
Tiny pinch salt
(Tiny pinch of grated cinnamon for the cinnamon meringue)

1: Whip egg whites in a bowl, until its firm enough to turn the bowl upside down, while the egg whites stays in the bowl
2: Put sugar, water, salt & vanilla sugar in a sauce pan and gradually turn the heat up to medium / high, let it boil until it reach 116 degrees Celsius and remove the pan from the heat
3: Pour the sugar mass very slowly in the egg whites, only a little at a time, while constantly whipping
4: Keep whipping until the consistency is firm enough (have patience, it takes a little time; approx. 10 min)
5: Place it in the fridge for 2 hours before use.

Now you are ready to put the meringue in a piping bag and use it to top your cocktails.

40 ml vodka
30 ml strawberry pure homemade
20 ml fresh organic lemon juice
20 ml licor 43

Garnish: Freezedried & dehydrated strawberries

Spiced orange cake

50 ml spiced rum (with a good spice to it)

30 ml fresh organic lime juice
15 ml cointreau
10 ml aperol
Dash winter bitters

50 ml apple gin
30 ml fresh organic lime juice
20 ml salty caramel liqueur
10 ml apple & caramel syrup homemade
Dash vanilla & ginger bitters
Homemade italian meringue

Method: Shake with ice & double strain into a chilled glass, top with meringue and torch it
Garnish: Freeze dried apple, dehydrated apple and a cookie

Grandpa´s beard

40 ml vodka
30 ml raspberry pure homemade
20 ml fresh organic lemon juice
10 ml chambord
10 ml licor 43
Dash liqourice bitters
Italian meringue homemade

Method: Shake with ice & double strain into a chilled glass, top with meringue and torch it
Garnish: Freezedried raspberries

Apple pie

50 ml apple gin
25 ml fresh organic lemon juice
15 ml licor 43
10 ml ginger liqueur
10 ml apple syrup
Italian cinnamon meringue homemade

Method: Shake with ice & double strain into a chilled glass, top with meringue and torch it
Garnish: Dehydrated apple, cookie and cinnamon stick

Lime is the key

60 ml gin (lime forward)
30 ml fresh organic lime juice
20 ml lime cordial
10 ml licor 43
1 bsp suze
Italian meringue homemade

Method: Shake with ice & double strain into a chilled glass, top with meringue and torch it
Garnish: Grated lime peel and a cookie
